My nueva Jo-Mex kitchen

We have been cooking up a Mexican storm since we found Azteca Mexican Food Products in nearby Midrand.

Nachos of course ... chili con carne made with a homemade chili paste ... tortilla soup with real hominy ... salsa verde made with tomatillos ... chiles rellenos with poblano peppers ... burritos ... enchiladas ... fajitas. We even came up with our own tortilla "lasagne" layered with cheese and chili.

And here is another little tip I got from Gaby at Azteca. To make up for the complete absence of Monterey Jack cheese in South Africa, try substituting Clover Tussers cheese from Pick n Pay or Daily cheese from Woolies. They work great. Thanks again, Gaby!
